I’d like to see what performance benefits would be gained if the softwareset on the nexus would be trimmed down to only what is needed for trading apps?

Indifferent, it’s a marketing based proposition IMHO and no more than that.
Interestingly I also observe the slight of hand in the interview of first talking about N3K and then switching to N2K FEX. So which one is recommended for a Cisco Trading Fabric – it cannot be both. What characteristic of N5K makes it a good platform for a Trading Architecture, perhaps I am missing something. Can we also define what Cisco mean when they talk of a Fabric i.e. characteristics and scale?
